A rare heirloom variety of amaranth from Kerala with bright pink stems, roots, and leaf veins. The entire plant is edible and extremely nutritious. This is actually a different species from the more common green and red amaranth varieties and the plants undergo vegetative growth for many months, providing regular harvests of leaves and young shoots. The tender stems are edible and add amazing pops of color to food!
