Pimento peppers are heart-shaped, sweet, and spicy peppers. They are thick-skinned and are filled with richly flavored juices. This make them perfect for stuffing, or using as a stuffing. Undoubtedly they are most famous for their use to stuff green olives (those red fillings inside most green olives are pieces of this variety of pepper). While they are not burning hot like habanero peppers, they are spicey and can be used to flavor foods like regular chili. They are also rich in red color and are often dried to make a richly flavored paprika powder!
