An eggplant you eat raw?
Eggplants are versatile fruits. They are used across the world and prepared many different styles. Generally, however, eggplant is eaten cooked, after marinating it in other flavors for it to absorb. Many eggplant varieties also need to be salted to extract the bitter tasting compounds from it before cooking.
So why’d we eat this variety raw??
Well, Shenshu mizunasu is an ancient Japanese heirloom eggplant variety bred for exactly this purpose! In cultivation since as far back as the 1300s, mizunasu (meaning “water eggplant”) is an extremely gourmet eggplant variety with no bitterness and a sweet and succulent taste. It actually tastes a lot like cucumber, with a slightly more complex flavor profile. It has a delicious and fresh mouthfeel, and although we were hesitant about enjoying raw eggplant, we devoured the whole plateful in no time! This variety can also be used for other purposes. It’s delicate flavor makes it an excellent sponge for absorbing the flavors of spices and herbs and it’s high water content makes it suitable for making bhartas as well.
