Huacatay (aka Black mint marigold)-  This south American herb is an essential component of Peruvian cuisine. This species belongs to the marigold family, and the leaves look similar to the common french and African marigolds. However, the plant grows several feet tall and produces hundreds of smaller white flowers. The fragrance of the leaf is hard to describe but some say it is like a mix of liquorice, mint, pine, citrus, and basil and the flavor is equally unique. Useful for salsas, teas, chutneys, aromatherapy, etc, and has a huge list of known health benefits! Pollinators love the flowers and the plants are the roots are even more effective at controlling soil borne nematode disease than the more common ornamental marigold.
